In fact Maine has 17.5 million acres of forests and most of it is privately owned. From these vast woodlands come a wide variety of native trees that have extraordinary cooking and smoking qualities. The long cold winters and the short, vibrant summers create woods with distinct cooking aromas and characteristics. Specialties are in Golden Birch (the King of Alders), Wild Apple, Black Cherry, White Cedar and Sugar Maple in chips, chunks and planks for all your smoking and barbecue needs.
